This is our Top Side Item. Rachel's grandmother passed this recipe to Rachel's mother and Rachel learned it from her mother's knee. Guests go crazy for this Mac and beg for the recipe. Rachel says "then you wouldn't need us!". Our guests always say "don't tell my mama but your Mac is better than hers!"
A South Carolina specialty. We simmer Boston Butts (Pork Shoulder), our Spice Rub, Onions, and a few other secret ingredients in a big pot for hours to make a thick Stew called Hash. Now, other folks use all parts of the pig "rooter to the tooter" for their hash. We only use pure meat. It is delicious over Rice.
A South Carolina original. It was created years ago in the Pee Dee region as way to feed a lot of folks with just one dish. It was served at "Stump Meetings" where politicians would speak from a tree stump to large crowds. We make ours with Rice, Shredded Chicken Thighs, Smoked Sausage, Diced Onions, a small bit of Celery, and our Spice Rub. This dish is best served a little "boggy". When it sticks to the serving spoon, we know its ready for you.
Our most popular sauce. We created it as a BBQ sauce but then we found the sauce delicious on many other things. It is great on Pork, Chicken, Fish, Hamburgers, Fried Green Tomatoes, even Scrambled Eggs. We use it as a Salad Dressing paired with Ranch or Blue Cheese.
Awesome barbecue! I ate both hash and meat today (quietly in isolation so I wouldn’t have to share!) It was awesome. I’d like to buy some sauce sometime. I actually drank it.
This sauce has Bold Mustard flavor with a little kick from our Spice Rub and Pepper. Great on Pork, Chicken, and any other time you would use mustard.
